Ingredients

Breakfast Sandwich

  • 2 English muffins sliced or split in half
  • 4 slices Canadian bacon
  • 1 TBSP Butter
  • 4 Eggs
  • 2 slices Your choice of cheese (e.g. cheddar Swiss or American)
  • Salt to taste
  • Black pepper to taste

Fruit

  • 2 cups Fresh fruit (e.g., berries banana or oranges)

Orange Juice

  • 16 oz Orange juice

Instructions

  • Prep the ingredients as listed above.
  • Toast the English muffins. Set aside.
  • Cook Canadian Bacon: In a skillet over medium heat, cook the Canadian bacon for 2 - 3 minutes per side, until heated through and slightly crispy. Remove from the skillet and set aside.
  • Cook Eggs: Add the butter a skillet over medium heat. Crack the eggs into the skillet and cook until the white is firm then flip over and top with cheese. Cook until melted, about 1 minute longer. Season with salt and black pepper.
  • Place the canadian bacon on the english muffin and top with eggs. Place the other half of the English muffin on top.
  • Serve the Canadian bacon, egg, and cheese sandwiches alongside fresh fruit and orange juice.
