Ingredients

Home Fries

  • 1 cup Potatoes diced
  • 1 tsp Extra-virgin olive oil
  • ¼ tsp Garlic powder
  • ¼ tsp Paprika
  • Salt
  • Black pepper

Chicken Sausage

  • 2 oz Chicken sausage links chopped

Eggs

  • 2 tsp Butter or oil (for cooking)
  • 4 Eggs
  • Salt
  • Black Pepper
  • 2 Whole wheat tortilla

Avocado

  • 1 Avocado sliced
  • Salt
  • Black pepper
  • Lime juice

Fruit

  • 2 cups Mixed fruit i.e. Grapes melon pineapple prepared accordingly

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Preheat the oven to 400F (204C).
  • Prepare ingredients per the instructions above.
  • Toss the potatoes with oil, garlic powder, paprika, salt and pepper. Cook on a baking sheet in the oven, toss about halfway through and add the chicken sausage, cook until the potatoes are tender and nicely browned.
  • Add butter or cooking oil to a nonstick pan over medium heat. Add the eggs to the pan. Cook until the whites are firm. Then remove from the heat. Season with salt and pepper.
  • Season the avocado with salt, pepper and lime juice.
  • Place the eggs, home fries, sausage, avocado in a wrap. Fold in the ends and roll up. Cut in half.
  • Serve the wrap with fruit and orange juice.
