Ingredients

Iced Salted Honey Latte

  • 2 cups Coffee cold
  • 1 TBSP Honey
  • 1 cup Milk
  • Ice cubes
  • 1/4 tsp Flaky sea salt

Breakfast Burrito

  • 1 Potato peeled and diced small
  • 2 TBSP Butter
  • 1/2 Onion diced
  • 1/2 Bell pepper diced
  • 4 oz Breakfast sausage links crumbled or chopped
  • 3 Eggs beaten
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup Cheddar cheese shredded (or Mexican blend)
  • 2 large Flour tortillas

Fruit

  • 2 cups Fresh fruit (berries, sliced citrus, melon, grapes, or a mix)

Instructions

  • Brew the coffee using your preferred method and let it cool.
  • Prep all the ingredients per the instructions above.
  • Add the potatoes to a pot of water. Bring to a boil. Cook until tender about 12 - 14 minutes. Then drain.
  • Add the butter to a pan over medium heat, saute the onion and bell pepper until softened.
  • Add the sausage. Cook until browned and fully cooked. Add in the potato and saute about 1 minute. Season with salt and black pepper.
  • Pour the beaten eggs into the pan and scramble until cooked through.
  • Remove from heat and stir in the shredded cheese until melted.
  • Warm the flour tortillas in a dry pan or microwave. Fill each tortilla with the burrito mixture and roll tightly. Cut in half.
  • Make the iced salted honey latte. Gently warm the milk with the honey in a saucepan over low heat until the honey dissolves. Stir the honey milk into the cold coffee, add ice, and finish with a pinch of flaky sea salt.
  • Serve the burritos with the iced salted honey lattes and fresh fruit.
