Ingredients

Black Bean Chicken Sausage Breakfast Burrito

  • 2 Chicken sausage links chopped
  • 2 tsp Butter
  • ¼ cup Red onion finely diced
  • ¼ cup Green bell pepper finely diced
  • 4 Eggs beaten
  • tsp Salt
  • tsp Black pepper
  • ½ cup Black beans drained and rinsed
  • 2 Whole wheat tortilla 8–10 inch
  • ½ cup Mexican cheese blend optional

Homemade Chipotle Aioli

  • 2 TBSP Mayonnaise
  • 1 tsp Chipotle sauce
  • ½ tsp Lime juice

Fruit

  • 1 cup Fresh fruit e.g. mango chunks, banana slices, or blackberries, washed and prepared as needed

OJ

  • 16 oz Orange juice cold

Instructions

  • Prepare the ingredients as listed above.
  • Heat a skillet over medium heat. Add chopped chicken sausage and cook for 3–4 minutes until browned.
  • Add red onion and green bell pepper. Sauté for another 2–3 minutes until softened.
  • Pour in the beaten eggs and stir gently until just set, about 2–3 minutes. Season with salt and black pepper. Remove from heat.
  • In a small bowl, mix mayonnaise, chipotle sauce, lime juice. Set aside.
  • Warm the whole wheat wraps in a dry skillet for 15–20 seconds per side or microwave wrapped in a damp paper towel for 20 seconds.
  • Spread the wrap with aioli. Portion the egg mixture and black beans onto the wrap. Top with cheese. Fold in the sides and roll tightly. Slice in half if desired.
  • Serve the burritos with a side of fresh fruit and cold orange juice. Enjoy your breakfast!
