Ingredients

Ribs

  • 1/2 TBSP Brown sugar
  • 1 tsp Paprika
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 lbs Pork baby back ribs (1 rack of ribs is about 2 lbs)
  • 2 cups BBQ sauce

Grilled Corn

  • 2 ears Corn on the cob shucked
  • 2 tsp Butter

Garlic Cheese Bread

  • 2 slices Crusty bread
  • 2 TBSP Butter softened
  • 1 clove Garlic minced
  • 1/3 cup Mozzarella cheese shredded

Watermelon

  • 4 slices Watermelon

Watermelon Mint Drink

  • 2 cups Watermelon diced
  • 6 leaves Fresh mint
  • 1 TBSP Lime juice
  • 1 tsp Honey or agave syrup (optional)
  • 16 oz Water cold

Instructions

  • Prep all ingredients per the instructions above.
  • Prep ribs: In a small bowl, combine brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Rub mixture evenly over ribs.
  • Bake ribs: Preheat oven to 350°F (176°C). Wrap ribs in foil and place on a baking sheet. Cook for 3–4 hours until tender.
  • Grill corn: Preheat grill or grill pan to medium heat. Grill corn on all sides until tender and charred. Spread with butter, season with salt and pepper.
  • Finish ribs: Remove ribs from foil, brush with BBQ sauce, and grill for 3–5 minutes per side until caramelized. Slice between rib joints to serve.
  • Make garlic cheese bread: Toast bread, spread with butter and garlic, then top with mozzarella. Broil until the cheese is melted and bubbly.
  • Make watermelon mint drink: Blend watermelon, mint, lime juice, honey (if using), and cold water until smooth. Optional: strain through a fine mesh sieve. Pour into a pitcher.
  • Serve: Plate ribs with grilled corn, garlic cheese bread, and watermelon slices. Enjoy with a watermelon mint drink.
