Prep all ingredients per the instructions above.
Prep ribs: In a small bowl, combine brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Rub mixture evenly over ribs.
Bake ribs: Preheat oven to 350°F (176°C). Wrap ribs in foil and place on a baking sheet. Cook for 3–4 hours until tender.
Grill corn: Preheat grill or grill pan to medium heat. Grill corn on all sides until tender and charred. Spread with butter, season with salt and pepper.
Finish ribs: Remove ribs from foil, brush with BBQ sauce, and grill for 3–5 minutes per side until caramelized. Slice between rib joints to serve.
Make garlic cheese bread: Toast bread, spread with butter and garlic, then top with mozzarella. Broil until the cheese is melted and bubbly.
Make watermelon mint drink: Blend watermelon, mint, lime juice, honey (if using), and cold water until smooth. Optional: strain through a fine mesh sieve. Pour into a pitcher.
Serve: Plate ribs with grilled corn, garlic cheese bread, and watermelon slices. Enjoy with a watermelon mint drink.
