Ingredients
Clementine
- 2 Clementines peeled and segmented
Breakfast Sandwich
- 4 slices Bacon
- 4 slices White bread toasted
- 1 TBSP Butter
- 4 Eggs
- 2 slices Your choice of cheese (e.g. cheddar Swiss or American)
- Salt to taste
- Black pepper to taste
Mango Lassi
- 1 ½ cups Frozen mango chopped
- ¾ cup Plain yogurt
- ¾ cup Milk
- ¼ TBSP Ground cardamom
- 1 TBSP Sugar to taste
Instructions
- Place a skillet over medium heat. Cook bacon for about 5 - 7 minutes on one side, then flip and cook for another 3 - 5 minutes until crispy. Remove from the skillet allowing it to drain on paper towels.
- While the bacon cooks, combine mangoes, yogurt, milk, cardamom powder, and sugar in a blender. Blend until smooth. Adjust the sweetness and consistency by adding more sugar, milk, or mango, along with a splash of water if needed. Pour the mixture into glasses.
- Toast the bread. Set aside.
- Add butter to a skillet over medium heat. Crack the eggs into the skillet and cook until the white is firm but the yolks are very runny to act as a sauce, then flip over and top with cheese. Cook until melted, about 1 minute longer. Season with salt and black pepper.
- Layer the bread with bacon and eggs topped with cheese. Place the other half of the bread on top. Cut in half.
- Serve the sandwich with the mango lassi and clementine segments.
