Ingredients

Clementine

  • 2 Clementines peeled and segmented

Breakfast Sandwich

  • 4 slices Bacon
  • 4 slices White bread toasted
  • 1 TBSP Butter
  • 4 Eggs
  • 2 slices Your choice of cheese (e.g. cheddar Swiss or American)
  • Salt to taste
  • Black pepper to taste

Mango Lassi

  • 1 ½ cups Frozen mango chopped
  • ¾ cup Plain yogurt
  • ¾ cup Milk
  • ¼ TBSP Ground cardamom
  • 1 TBSP Sugar to taste

Instructions

  • Place a skillet over medium heat. Cook bacon for about 5 - 7 minutes on one side, then flip and cook for another 3 - 5 minutes until crispy. Remove from the skillet allowing it to drain on paper towels.
  • While the bacon cooks, combine mangoes, yogurt, milk, cardamom powder, and sugar in a blender. Blend until smooth. Adjust the sweetness and consistency by adding more sugar, milk, or mango, along with a splash of water if needed. Pour the mixture into glasses.
  • Toast the bread. Set aside.
  • Add butter to a skillet over medium heat. Crack the eggs into the skillet and cook until the white is firm but the yolks are very runny to act as a sauce, then flip over and top with cheese. Cook until melted, about 1 minute longer. Season with salt and black pepper.
  • Layer the bread with bacon and eggs topped with cheese. Place the other half of the bread on top. Cut in half.
  • Serve the sandwich with the mango lassi and clementine segments.
