Ingredients

Pumpkin Cream

  • 2 cups Milk (your choice)
  • 3 TBSP Pumpkin puree
  • 2 TBSP Maple syrup
  • 2 tsp Vanilla extract
  • 2 tsp Pumpkin pie spice or cinnamon
  • pinch Salt

Cold brew

  • 2 cups Cold brew coffee
  • Ice cubes

Breakfast Deviled Eggs

  • 4 Eggs hard boiled
  • 2 oz Cream cheese softened
  • 2 slices Bacon cooked and chopped
  • 1 Scallion sliced
  • Salt to taste
  • Black pepper to taste
  • 1/4 tsp Paprika optional for garnish
  • 1 tsp Everything but the bagel seasoning for garnish

Hot Apple Cinnamon Oatmeal

  • 1 medium Apple diced
  • 1 cup Rolled oats
  • 2 cups Water or milk
  • 1 tsp Ground cinnamon
  • 2 TBSP Brown sugar or maple syrup
  • pinch Salt
  • 2 TBSP Walnuts or pecans chopped optional for topping

Instructions

  • In a small saucepan combine the milk, pumpkin puree, maple syrup, vanilla, pumpkin spice, and salt over low to medium heat. Whisk to combine until it's slightly steaming but not boiling. Alternatively, you can combine all of the ingredients in a glass and use a hand-held frother to mix together. Remove from heat and refrigerate.
  • For the Eggs: Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, cover and remove from heat. Let sit for 10 - 12 minutes.
  • Once the eggs are done, place them in an ice bath to cool.
  • Cook the Bacon: While the eggs are cooking, in a skillet over medium heat, cook the bacon until crispy. Remove and place on a paper towel to drain, then crumble into pieces.
  • For the Apple Oatmeal: Dice the apple and set aside. Gather all other ingredients for the oatmeal.
  • Cook the Oats: In a medium saucepan, bring water or milk to a boil. Add the rolled oats and a pinch of salt. Stir well and reduce the heat to medium.
  • Add the Apples and Cinnamon: Stir in the diced apple and ground cinnamon. Cook for about 5 - 7 minutes, stirring occasionally, until the oats are tender and the mixture is creamy.
  • Sweeten the Oatmeal: Once cooked, remove from heat and stir in the brown sugar or maple syrup. Adjust the sweetness to your preference.
  • Prepare the Deviled Egg Filling: While the oatmeal is cooking, carefully peel the eggs under cold running water. Slice each egg in half lengthwise, remove the yolks and place them in a mixing bowl.
  • Add the softened cream cheese, crumbled bacon (reserve some for topping), salt, and pepper to the yolks. Mash together until well combined and smooth.
  • Fill the Eggs: Spoon or pipe the yolk mixture back into the egg white halves. Sprinkle with reserved bacon, green onions, and everything bagel seasoning.
  • Remove the pumpkin cream mixture from the fridge and add to a milk frother. Froth until nice and frothy.
  • Place ice cubes into a clean glass, pour the cold brew over ice, and add the pumpkin cream mixture. Sprinkle pumpkin pie spice over top.
  • Serve: Divide the oatmeal into bowls. Top with walnuts or pecans if desired. Serve the deviled eggs and pumpkin cream cold brew.
