Ingredients
- 1/2 cup Brown rice
- 2 tbsp Extra-virgin olive oil
- 1 tbsp Sesame oil
- 1/2 Green bell pepper sliced
- 1/2 Red bell pepper sliced
- 1/2 Onion chopped
- 3 oz Mushrooms sliced
- 2 stalks Celery sliced
- 1 lb Ground turkey
- 2 cloves Garlic minced
- 2 tsp Fresh ginger minced
- 1/4 cup Chicken broth
- 4 tbsp Reduced-sodium soy sauce
- 1 tbsp Cornstarch
- 2 cups Snow peas
Instructions
- Cook the rice according to the directions on the package. Drain any excess water if necessary.
- In a nonstick pan on medium heat, heat both oils. Add in the peppers, onions, mushrooms, and celery. Saute for 4 - 5 minutes. Add in the ground turkey, garlic, and ginger and cook breaking the turkey up into smaller pieces until it is no longer pink. Stir in the chicken broth, soy sauce, and cornstarch; bring to a low simmer for about 6 minutes.
- Add the snow peas and cook for about 2 minutes. Toss in the rice and serve.
