Ingredients

  • 1 cup Corn fresh or frozen (thaw if using frozen)
  • 1/2 cup Red bell pepper seeded and finely chopped
  • 2 tbsp Red onion finely chopped
  • 3 tbsp Fresh cilantro chopped
  • 1 tbsp Lime juice
  • 2 tbsp Mayonnaise
  • 1/4 tsp Paprika
  • 1/4 tsp Chili powder

Instructions

  • Mix together the corn, pepper, onion, cilantro, lime juice, and mayo. Season with salt and pepper. Sprinkle paprika and chili powder over top.
