- 2 Potatoes peeled and shredded
- 1/4 cup All-purpose flour or more if needed
- 1 Egg
- 4 tbsp Extra-virgin olive oil
Instructions
- Mix the potatoes, flour, and egg in a bowl. Season with salt and pepper. (the mixture should be doughy not wet, if wet add flour a little at a time until it is no longer wet).
- In a nonstick pan over medium heat, get the oil hot.
- Form the potato mixture into flat pancakes.
- Place the potato pancakes into the pan and cook on both sides to golden brown. Serve.
