Ingredients

  • 2 Potatoes peeled and shredded
  • 1/4 cup All-purpose flour or more if needed
  • 1 Egg
  • 4 tbsp Extra-virgin olive oil

Instructions

  • Mix the potatoes, flour, and egg in a bowl. Season with salt and pepper. (the mixture should be doughy not wet, if wet add flour a little at a time until it is no longer wet).
  • In a nonstick pan over medium heat, get the oil hot.
  • Form the potato mixture into flat pancakes.
  • Place the potato pancakes into the pan and cook on both sides to golden brown. Serve.
