Chipotle Honey Chicken Skewers

Equipment

Ingredients

  • 2 tsp Chipotle Sauce
  • 3 tbsp Lime juice juiced
  • 6 tbsp Honey
  • 1 lb Chicken breast boneless skinless cut into 1 inch chunks
  • 2 tbsp Extra-virgin olive oil
  • 8 Mushrooms halved
  • 1/2 Onion cut into 1 inch chunks
  • 1 Red bell pepper seeded and cut into 1 inch chunks
  • 1 Green bell pepper seeded and cut into 1 inch chunks

Instructions

  • Preheat the grill or a grill pan on medium heat.
  • Soak the wooden skewers in water for 5 minutes.
  • In a bowl mix together the chipotle, lime juice, and honey.
  • Mix the chicken and oil in a bowl and season with salt and pepper. Mix in half of the chipotle honey mixture.
  • Layer the wooden skewer with mushroom, onion, chicken, peppers, and repeat this process until the skewer is filled up.
  • Grill on all sides until the chicken reaches an internal temperature of 160 degrees using a thermometer.
  • Drizzle the remaining sauce over the skewers before serving.
