Preheat the grill or a grill pan on medium heat.
Soak the wooden skewers in water for 5 minutes.
In a bowl mix together the chipotle, lime juice, and honey.
Mix the chicken and oil in a bowl and season with salt and pepper. Mix in half of the chipotle honey mixture.
Layer the wooden skewer with mushroom, onion, chicken, peppers, and repeat this process until the skewer is filled up.
Grill on all sides until the chicken reaches an internal temperature of 160 degrees using a thermometer.
Drizzle the remaining sauce over the skewers before serving.
