Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 3 tbsp Onion diced
  • 4 tbsp Green bell pepper seeded and diced
  • 6 oz Chicken sausage links diced
  • 8 Eggs beaten
  • 3 tbsp Tomato diced
  • 4 oz Cheddar cheese
  • 4 tsp Hot sauce optional
  • 8 slices Multigrain bread lightly toasted
  • 2 Plums pitted and sliced

Instructions

  • In a nonstick pan, heat the oil over medium heat. Add the onions and peppers and saute until soft, about 3 - 5 minutes. Add in the chicken sausage and cook for 3 minutes.
  • Add the eggs and tomato to the pan. Cook, without stirring, until egg mixture begins to set, approximately 1 - 2 minutes.
  • Using a spatula, gently lift a corner of the egg and tilt the pan to allow uncooked egg to flow underneath. Cook until set. Repeat the procedure until the egg is no longer runny.
  • Add the cheese and fold in half. Drizzle with hot sauce if desired.
  • Lightly toast the bread to a golden brown but still somewhat soft.
  • Portion the eggs onto the bread, cut in half and serve with plums.
