In a nonstick pan, heat the oil over medium heat. Add the onions and peppers and saute until soft, about 3 - 5 minutes. Add in the chicken sausage and cook for 3 minutes.
Add the eggs and tomato to the pan. Cook, without stirring, until egg mixture begins to set, approximately 1 - 2 minutes.
Using a spatula, gently lift a corner of the egg and tilt the pan to allow uncooked egg to flow underneath. Cook until set. Repeat the procedure until the egg is no longer runny.
Add the cheese and fold in half. Drizzle with hot sauce if desired.
Lightly toast the bread to a golden brown but still somewhat soft.
Portion the eggs onto the bread, cut in half and serve with plums.
