Sausage Ricotta Breakfast Sandwich

Ingredients

  • 6 oz Ground sausage or use store bought sausage patties
  • 4 tbsp Ricotta cheese
  • 4 tsp Parmesan cheese
  • 8 slices Sourdough bread lightly toasted (or your choice of bread)
  • 4 tsp Extra-virgin olive oil
  • 8 Eggs
  • 8 slices Tomato
  • 2 cups Grapes

Instructions

  • Form the ground sausage into flat patties. In a nonstick pan over medium heat, cook the sausage for 2 - 3 minutes on each side or until cooked to an internal temperature of 150 degrees using a thermometer. Then set aside.
  • In a bowl mix the ricotta, parmesan, and season with salt and pepper to taste.
  • Lightly toast the bread and spread the ricotta mixture onto the bread.
  • In a nonstick pan over medium heat add the oil. Crack the eggs into the pan; cook until the whites are nearly set, break the yolks, and gently flip over with a spatula; cook for 1 minute more.
  • Place the eggs on top of the ricotta, then the sausage patty, top with tomato seasoned with salt and pepper; Cut the sandwich in half and serve with grapes.
