In a bowl mix the ricotta, parmesan, and season with salt and pepper to taste.
Lightly toast the bread and spread the ricotta mixture onto the bread.
In a nonstick pan over medium heat add the oil. Crack the eggs into the pan; cook until the whites are nearly set, break the yolks, and gently flip over with a spatula; cook for 1 minute more.
Place the eggs on top of the ricotta, then the sausage patty, top with tomato seasoned with salt and pepper; Cut the sandwich in half and serve with grapes.
