Ingredients

Mediterranean Tuna Wrap

  • 8 oz Canned albacore tuna packed in water and drained
  • 2 TBSP Extra-virgin olive oil
  • 1 TBSP Lemon juice
  • Salt
  • Black pepper
  • 1/4 cup Red onion finely chopped
  • 1/4 cup Cucumber chopped
  • 1/4 cup Tomato chopped
  • ΒΌ cup Kalamata olives chopped
  • 1 TBSP Fresh parsley chopped
  • 2 Whole wheat tortilla wraps burrito size
  • 1 cup Baby spinach

Apples and Cheese

  • 1 Apple sliced
  • 1.5 oz Your choice of cheese sliced

Pickle

  • 2 Pickle spears

Hot Chamomile Tea

  • 16 oz Water
  • 2 Chamomile tea bags or 1 tsp loose-leaf chamomile tea per bag

Instructions

  • Prep all ingredients per the instructions above.
  • Place the albacore tuna in a medium bowl and gently flake with a fork.
  • Add the olive oil, lemon juice, salt, and black pepper. Mix until evenly combined.
  • Stir in the red onion, cucumber, tomato, Kalamata olives, and parsley until well incorporated.
  • Lay the tortilla wraps flat. Layer with baby spinach and the tuna mixture. Fold in the sides and roll tightly to form wraps.
  • Bring water to a boil. Place the chamomile tea bag in a cup and pour the hot water over it. Steep for several minutes, then remove the tea bag.
  • Serve the Mediterranean tuna wraps with sliced apple, cheese, pickle spears, and hot chamomile tea.
