Prep all ingredients per the instructions above.
Place the albacore tuna in a medium bowl and gently flake with a fork.
Add the olive oil, lemon juice, salt, and black pepper. Mix until evenly combined.
Stir in the red onion, cucumber, tomato, Kalamata olives, and parsley until well incorporated.
Lay the tortilla wraps flat. Layer with baby spinach and the tuna mixture. Fold in the sides and roll tightly to form wraps.
Bring water to a boil. Place the chamomile tea bag in a cup and pour the hot water over it. Steep for several minutes, then remove the tea bag.
Serve the Mediterranean tuna wraps with sliced apple, cheese, pickle spears, and hot chamomile tea.
