Mediterranean Tuna Wrap
- 8 oz Canned albacore tuna packed in water and drained
- 2 TBSP Extra-virgin olive oil
- 1 TBSP Lemon juice
- Salt
- Black pepper
- 1/4 cup Red onion finely chopped
- 1/4 cup Cucumber chopped
- 1/4 cup Tomato chopped
- 2 TBSP Kalamata olives chopped
- 1 TBSP Fresh parsley chopped
- 2 Whole wheat tortilla wraps burrito size
- 1 cup Baby spinach
Apples and Cheese
- 1 Apple sliced
- 1.5 oz Your choice of cheese sliced
Pickle
- 2 Pickle spears
Lemon Sparkling Water
- 24 oz Sparkling water
- 1 Lemon sliced
- Ice cubes
Instructions
- Prepare the ingredients as instructed.
- Place the tuna in a medium bowl and gently flake with a fork. Add the olive oil, lemon juice, salt, and black pepper. Mix until evenly combined.
- Stir in the red onion, cucumber, tomato, Kalamata olives, feta cheese, and parsley until well incorporated.
- Lay the tortilla wraps flat. Layer each with baby spinach and the tuna mixture. Fold in the sides and roll tightly to form wraps.
- Pour the sparkling water over lemon slices.
- Serve the Mediterranean tuna wraps with sliced apple, cheese, pickle spears, and lemon sparkling water.
