Ingredients

Mediterranean Tuna Wrap

  • 8 oz Canned albacore tuna packed in water and drained
  • 2 TBSP Extra-virgin olive oil
  • 1 TBSP Lemon juice
  • Salt
  • Black pepper
  • 1/4 cup Red onion finely chopped
  • 1/4 cup Cucumber chopped
  • 1/4 cup Tomato chopped
  • 2 TBSP Kalamata olives chopped
  • 1 TBSP Fresh parsley chopped
  • 2 Whole wheat tortilla wraps burrito size
  • 1 cup Baby spinach

Apples and Cheese

  • 1 Apple sliced
  • 1.5 oz Your choice of cheese sliced

Pickle

  • 2 Pickle spears

Lemon Sparkling Water

  • 24 oz Sparkling water
  • 1 Lemon sliced
  • Ice cubes

Instructions

  • Prepare the ingredients as instructed.
  • Place the tuna in a medium bowl and gently flake with a fork. Add the olive oil, lemon juice, salt, and black pepper. Mix until evenly combined.
  • Stir in the red onion, cucumber, tomato, Kalamata olives, feta cheese, and parsley until well incorporated.
  • Lay the tortilla wraps flat. Layer each with baby spinach and the tuna mixture. Fold in the sides and roll tightly to form wraps.
  • Pour the sparkling water over lemon slices.
  • Serve the Mediterranean tuna wraps with sliced apple, cheese, pickle spears, and lemon sparkling water.
