Ingredients
Jambon Beurre Sandwich
- 1.5 oz Brie cheese cut into pieces
- 1.5 TBSP Butter softened
- 1 TBSP Fresh chives minced
- 1 TBSP Fresh parsley minced
- ½ tsp Dijon mustard
- 1 clove Garlic grated
- Salt to taste
- Black pepper to taste
- 1 cup Arugula
- ½ TBSP Lemon juice
- 2 Whole wheat rolls 6-inch
- 6 oz Deli ham thinly sliced
Carrots and Hummus
- 1 cup Carrots peeled and cut into sticks
- 1/3 cup Hummus
Sliced Pear
- 1 Pear ripe, washed, and sliced
Lemon Chia Sparkling Water
- 24 oz Sparkling water cold
- 1 Lemon sliced
- 2 tsp Chia seeds
Instructions
- Prep all ingredients per the instructions above.
- Slice the Brie and leave out at room temperature to soften.
- In a small bowl, mix the butter, chives, parsley, Dijon mustard, and grated garlic until well combined. Season with salt and black pepper to taste.
- In a separate bowl, toss the arugula with the lemon juice and season lightly with salt and black pepper.
- Slice the rolls lengthwise and spread the herb butter evenly on the inside of each roll.
- Layer with deli ham, Brie cheese, and dressed arugula.
- In a pitcher or large glass, combine the sparkling water, lemon slices, and chia seeds. Stir well, let sit for 2–3 minutes, then stir again to prevent clumping.
- Serve the sandwiches alongside the carrot sticks with hummus, sliced pear, and lemon chia sparkling water.
