Ingredients
Cucumber Water
- 24 oz Water
- 8 slices Cucumber
- Ice cubes
Vegetable Hummus Wrap
- 2 large Whole wheat tortilla whole wheat or preferred type
- 1 cup Hummus
- 1 cup Carrots shredded
- 1 Cucumber thinly sliced
- 1 Tomato sliced
- 1 cup Olives halved
- 2 TBSP Sunflower seeds
- 1 cup Pickle slices
- 1 cup Arugula
- 1 Avocado ripe, sliced
- 6 slices Parmesan cheese from a wedge
- Salt to taste
- Black pepper to taste
Cheese
- 2 oz Your choice of cheese e.g. Cheddar or Brie
Mango
- 1 Mango sliced
Apple
- 1 Apple sliced
Instructions
- Prep the ingredients as per instructions above.
- Make cucumber water: Combine cucumber slices and water and let infuse in the refrigerator. Serve over ice if desired.
- Assemble wraps: Lay tortilla wraps flat on a clean surface. Spread a generous amount of hummus on each wrap. Layer with carrots, cucumber slices, tomato slices, olives, sunflower seeds, pickles, avocado, arugula, and Parmesan cheese. Season with salt and black pepper.
- Roll and slice: Fold in the sides, roll up tightly, and slice each wrap in half.
- Serve alongside cheese, mango, apple, and cucumber water.
