Prep the ingredients as per instructions above.
Make cucumber water: Combine cucumber slices and water and let infuse in the refrigerator. Serve over ice if desired.
Assemble wraps: Lay tortilla wraps flat on a clean surface. Spread a generous amount of hummus on each wrap. Layer with carrots, cucumber slices, tomato slices, olives, sunflower seeds, pickles, avocado, arugula, and Parmesan cheese. Season with salt and black pepper.
Roll and slice: Fold in the sides, roll up tightly, and slice each wrap in half.
Serve alongside cheese, mango, apple, and cucumber water.
