Frozen Dragon Fruit Smoothie Bowl
- ½ cup Milk or coconut water, your choice
- 4 cups Red dragon fruit frozen chunks
- 1 Banana sliced
- 1 TBSP Honey maple syrup, or agave syrup, optional
- ½ tsp Vanilla extract optional
Toppings
- 1 cup Fresh fruit e.g. sliced bananas, kiwi, mango chunks, strawberries, optional
- ½ cup Granola
- 2 TBSP Unsweetened coconut flakes
- 2 TBSP Nuts chopped, e.g. walnuts, pecans, or almonds
- 1 tsp Honey optional
Cottage Cheese with Honey
- 1 cup Cottage cheese
- 2 tsp Honey
Coffee
- Coffee
- Your choice of creamer optional
- Your choice of sweetener optional
Instructions
- Prepare all ingredients as listed above.
- Prepare the smoothie bowl: Pour the milk or coconut water into a high-speed blender. Add the frozen dragon fruit and banana. Add honey and vanilla extract if using. Blend on high until thick and smooth, adding additional liquid 1 TBSP at a time only if needed to reach a spoonable consistency.
- Portion the smoothie into bowls and add toppings. Top with fresh fruit, granola, coconut flakes, chopped nuts, and a drizzle of honey if desired.
- Prepare the cottage cheese: Divide cottage cheese between two small bowls and drizzle evenly with honey.
- Prepare the coffee: Brew coffee using your preferred method and add creamer and sweetener if desired.
- Serve the smoothie bowl with cottage cheese and coffee on the side. Enjoy your fresh and celebratory New Year breakfast.
