Ingredients

Frozen Dragon Fruit Smoothie Bowl

  • ½ cup Milk or coconut water, your choice
  • 4 cups Red dragon fruit frozen chunks
  • 1 Banana sliced
  • 1 TBSP Honey maple syrup, or agave syrup, optional
  • ½ tsp Vanilla extract optional

Toppings

  • 1 cup Fresh fruit e.g. sliced bananas, kiwi, mango chunks, strawberries, optional
  • ½ cup Granola
  • 2 TBSP Unsweetened coconut flakes
  • 2 TBSP Nuts chopped, e.g. walnuts, pecans, or almonds
  • 1 tsp Honey optional

Cottage Cheese with Honey

  • 1 cup Cottage cheese
  • 2 tsp Honey

Coffee

  • Coffee
  • Your choice of creamer optional
  • Your choice of sweetener optional

Instructions

  • Prepare all ingredients as listed above.
  • Prepare the smoothie bowl: Pour the milk or coconut water into a high-speed blender. Add the frozen dragon fruit and banana. Add honey and vanilla extract if using. Blend on high until thick and smooth, adding additional liquid 1 TBSP at a time only if needed to reach a spoonable consistency.
  • Portion the smoothie into bowls and add toppings. Top with fresh fruit, granola, coconut flakes, chopped nuts, and a drizzle of honey if desired.
  • Prepare the cottage cheese: Divide cottage cheese between two small bowls and drizzle evenly with honey.
  • Prepare the coffee: Brew coffee using your preferred method and add creamer and sweetener if desired.
  • Serve the smoothie bowl with cottage cheese and coffee on the side. Enjoy your fresh and celebratory New Year breakfast.
