Ingredients

Creamy Vanilla Porridge with Brown Sugar Apples

  • 1 cup Rolled oats
  • 1 1/2 cups Milk
  • 1/2 cup Heavy cream or half and half
  • 1/2 Vanilla bean split, seeds scraped
  • 1 Apple peeled and cut into thin wedges
  • 1 TBSP Brown sugar
  • 1 TBSP Honey

Fruit

  • 2 cups Fresh fruit e.g., berries, grapes, or citrus, washed and prepared as needed

Pumpkin Spice Oat Milk Latte

  • 2 cups Coffee or 2 espresso shots per latte
  • 1 cup Oat milk
  • 2 TBSP Pumpkin purée
  • 1 TBSP Maple syrup or brown sugar
  • 1/4 tsp Pumpkin pie spice
  • 1/4 tsp Vanilla extract

Instructions

  • Prepare all ingredients as listed.
  • Cook the porridge: Add rolled oats, milk, cream, and the vanilla pod with scraped seeds to a saucepan. Set over low medium heat. Stir often for 10 to 15 minutes until the mixture becomes thick and creamy. Add a splash of milk if it thickens too quickly.
  • Make the brown sugar apples: Place apple wedges, brown sugar, and honey in a separate saucepan. Cook over medium heat for about 10 minutes until tender and glossy.
  • Make the pumpkin spice oat milk latte: Brew the coffee. Warm oat milk, pumpkin purée, maple syrup, pumpkin pie spice, and vanilla in a small pot or frother, whisking until smooth and steaming. Combine with the coffee or espresso. Froth if desired.
  • Serve: Spoon the porridge into bowls and top with the warm apples. Add fresh fruit on the side and enjoy with the latte.
