Prepare all ingredients as listed.
Cook the porridge: Add rolled oats, milk, cream, and the vanilla pod with scraped seeds to a saucepan. Set over low medium heat. Stir often for 10 to 15 minutes until the mixture becomes thick and creamy. Add a splash of milk if it thickens too quickly.
Make the brown sugar apples: Place apple wedges, brown sugar, and honey in a separate saucepan. Cook over medium heat for about 10 minutes until tender and glossy.
Make the pumpkin spice oat milk latte: Brew the coffee. Warm oat milk, pumpkin purée, maple syrup, pumpkin pie spice, and vanilla in a small pot or frother, whisking until smooth and steaming. Combine with the coffee or espresso. Froth if desired.
Serve: Spoon the porridge into bowls and top with the warm apples. Add fresh fruit on the side and enjoy with the latte.
