Ingredients
Mexican Street Tacos
- 8 oz Ground beef
- 1 tsp Chili powder
- 1/2 tsp Ground cumin
- 1/2 tsp Garlic powder
- Salt to taste
- Black pepper to taste
- 1/4 cup Onion diced
- 1/4 cup Tomatoes diced
- 1 tsp Vegetable oil
- 4 Soft taco shells
- 1/4 cup Monterey Jack cheese shredded
- 1/4 cup Fresh cilantro chopped
Chips and Guacamole
- 2 Avocados ripe
- 1/4 cup Tomatoes diced
- 2 tsp Fresh cilantro chopped
- 1 TBSP Lime juice
- 1/4 tsp Garlic powder
- Salt to taste
- Black pepper to taste
- 2 oz Tortilla chips
Sparkling Chia Fresca
- 1/2 cup Lemon juice
- 16 oz Sparkling water
- 2 TBSP Maple syrup or honey
- 1/2 tsp Chia seeds
- pinch Salt
- 2 sprigs Fresh mint for garnish
Instructions
- Prep all ingredients according to the ingredient list above.
- Season the ground beef with chili powder, ground cumin, garlic powder, salt, and black pepper.
- Heat the vegetable oil in a skillet over medium heat. Add the seasoned ground beef and sauté, breaking it into small pieces, until fully browned. Remove from heat and set aside.
- Warm the soft taco shells on both sides in a pan over medium heat for about 20 seconds per side.
- Fill each taco shell with the cooked beef. Top with diced onion, tomatoes, shredded Monterey Jack cheese, and chopped fresh cilantro.
- To make the guacamole, mash the avocados in a bowl until smooth. Add the diced tomatoes, chopped cilantro, lime juice, garlic powder, salt, and black pepper. Stir until well combined.
- For the chia fresca, combine the lemon juice, sparkling water, maple syrup (or honey), chia seeds, and a pinch of salt. Stir and let sit for 5 minutes to allow the chia seeds to bloom.
- Serve the tacos with tortilla chips and guacamole, along with the sparkling chia fresca.
