Prep all ingredients according to the ingredient list above.
Season the ground beef with chili powder, ground cumin, garlic powder, salt, and black pepper.
Heat the vegetable oil in a skillet over medium heat. Add the seasoned ground beef and sauté, breaking it into small pieces, until fully browned. Remove from heat and set aside.
Warm the soft taco shells on both sides in a pan over medium heat for about 20 seconds per side.
Fill each taco shell with the cooked beef. Top with diced onion, tomatoes, shredded Monterey Jack cheese, and chopped fresh cilantro.
To make the guacamole, mash the avocados in a bowl until smooth. Add the diced tomatoes, chopped cilantro, lime juice, garlic powder, salt, and black pepper. Stir until well combined.
For the chia fresca, combine the lemon juice, sparkling water, maple syrup (or honey), chia seeds, and a pinch of salt. Stir and let sit for 5 minutes to allow the chia seeds to bloom.
Serve the tacos with tortilla chips and guacamole, along with the sparkling chia fresca.
