Ingredients
Jambon Beurre
- 2 TBSP Butter softened
- 1 TBSP Fresh chives minced
- 1 TBSP Fresh parsley minced
- 1/2 tsp Dijon mustard
- 1 clove Garlic grated
- Salt to taste
- Black pepper to taste
- 1 cup Arugula
- 1/2 TBSP Lemon juice
- 2 oz Brie cheese cut into pieces
- 2 Sub rolls cut into 6-inch pieces and sliced in half horizontally
- 6 oz Deli ham thinly sliced
Mango Lassi
- 1 cup Frozen mango chopped
- 1/4 cup Plain yogurt
- 3 cups Milk
- 1 TBSP Maple syrup to taste
- 1/4 tsp Ground cardamom
Sides
- 1 cup Carrots peeled and cut into sticks, or use baby carrots
- 1/2 cup Hummus
- 2 Pickle spears
Instructions
- Prep all ingredients as listed.
- Slice the Brie and let it sit at room temperature until softened.
- In a bowl, mix the softened butter, minced chives, minced parsley, Dijon mustard, and grated garlic. Season with salt and black pepper to taste.
- In a separate bowl, toss the arugula with lemon juice. Season with salt and black pepper.
- Spread the herb butter mixture evenly inside the sliced baguette.
- Layer the baguette with sliced deli ham, Brie cheese, and arugula. Top with the other half of the baguette to complete the sandwich.
- In a blender, combine the mango, yogurt, milk, cardamom, and sugar. Blend until smooth and creamy. Taste and adjust sweetness as needed.
- Serve the jambon beurre with carrot sticks, hummus, pickle spears, and mango lassi.
