Ingredients
Guacamole
- 1 Avocado pitted and diced
- 2 tsp Red onion minced
- 1/4 tsp Lemon juice
- 1 tsp Fresh cilantro chopped
Seasoning
- Salt to taste
- Black pepper to taste
Beef
- 8 oz Ground beef
- 1/2 tsp Onion powder
- 1/2 tsp Ground cumin
- 1/2 tsp Garlic powder
- 1/2 tsp Paprika
- 1/4 tsp Chili powder
Toppings
- 4 oz Tortilla chips
- 1/4 cup Monterey jack cheese shredded
- 1/4 cup Pepper jack cheese shredded
- 1/2 cup Cheddar cheese shredded
- 1/2 cup Refried beans
- 1 cup Romaine lettuce shredded
- 1/2 cup Tomato diced small
- 1 Jalapeño pepper sliced (optional)
- 1/4 cup Red onion diced
- 4 TBSP Sour cream
Pumpkin Beer
- 24 oz Pumpkin beer cold
Instructions
- Prep all ingredients as listed above.
- Preheat the oven broiler on low.
- To make the guacamole, mash the avocado in a bowl with a fork until smooth. Mix in red onion, lemon juice, and cilantro. Season with salt and pepper to taste. Refrigerate until ready to serve.
- To make the beef, heat a nonstick pan over medium heat. Add ground beef, onion powder, cumin, garlic powder, paprika, and chili powder.
- Break up the beef with a spatula and cook until it is no longer pink. Season with salt and pepper.
- Place tortilla chips on a baking sheet. Spoon cooked beef over the chips and top with shredded cheeses and refried beans.
- Broil until the cheese is fully melted.
- Remove nachos from the oven and top with lettuce, tomato, jalapeño (if using), red onion, sour cream, and guacamole.
- Serve with pumpkin beer.
