Ingredients

Guacamole

  • 1 Avocado pitted and diced
  • 2 tsp Red onion minced
  • 1/4 tsp Lemon juice
  • 1 tsp Fresh cilantro chopped

Seasoning

  • Salt to taste
  • Black pepper to taste

Beef

  • 8 oz Ground beef
  • 1/2 tsp Onion powder
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • 1/2 tsp Paprika
  • 1/4 tsp Chili powder

Toppings

  • 4 oz Tortilla chips
  • 1/4 cup Monterey jack cheese shredded
  • 1/4 cup Pepper jack cheese shredded
  • 1/2 cup Cheddar cheese shredded
  • 1/2 cup Refried beans
  • 1 cup Romaine lettuce shredded
  • 1/2 cup Tomato diced small
  • 1 Jalapeño pepper sliced (optional)
  • 1/4 cup Red onion diced
  • 4 TBSP Sour cream

Pumpkin Beer

  • 24 oz Pumpkin beer cold

Instructions

  • Prep all ingredients as listed above.
  • Preheat the oven broiler on low.
  • To make the guacamole, mash the avocado in a bowl with a fork until smooth. Mix in red onion, lemon juice, and cilantro. Season with salt and pepper to taste. Refrigerate until ready to serve.
  • To make the beef, heat a nonstick pan over medium heat. Add ground beef, onion powder, cumin, garlic powder, paprika, and chili powder.
  • Break up the beef with a spatula and cook until it is no longer pink. Season with salt and pepper.
  • Place tortilla chips on a baking sheet. Spoon cooked beef over the chips and top with shredded cheeses and refried beans.
  • Broil until the cheese is fully melted.
  • Remove nachos from the oven and top with lettuce, tomato, jalapeño (if using), red onion, sour cream, and guacamole.
  • Serve with pumpkin beer.
