Ingredients

Mexican Street Tacos

  • 8 oz Ground beef
  • 1 tsp Chili powder
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • Salt to taste
  • Black pepper to taste
  • 1 tsp Vegetable oil
  • 4 Soft taco shells
  • 1/4 cup Onion diced
  • 1/4 cup Tomatoes diced
  • 1/4 cup Fresh cilantro chopped
  • 1/2 cup Monterey Jack cheese shredded

Chips and Guacamole

  • 1 Avocado ripe
  • 1/4 cup Tomatoes diced
  • 2 tsp Fresh cilantro chopped
  • 1 TBSP Lime juice
  • 1/4 tsp Garlic powder
  • Salt to taste
  • Black pepper to taste
  • 2 oz Tortilla chips

Sparkling Chia Fresca

  • 1/2 cup Lemon juice
  • 16 oz Sparkling water
  • 2 TBSP Maple syrup or honey (your choice)
  • 1/2 tsp Chia seeds
  • pinch Salt
  • 2 sprigs Fresh mint for garnish

Instructions

  • Prep all ingredients according to the ingredient list above.
  • Season the ground beef with chili powder, ground cumin, garlic powder, salt, and black pepper.
  • Heat the oil in a skillet over medium heat. Once hot, add the seasoned ground beef and sauté, breaking it into small pieces, until nicely browned. Remove from heat and set aside.
  • Warm the taco shells on both sides in a pan over medium heat for about 20 seconds per side.
  • Fill each taco shell with cooked beef. Top with diced onion, tomatoes, shredded Monterey Jack cheese, and chopped fresh cilantro.
  • To make the guacamole, mash the avocados in a bowl until smooth. Add diced tomatoes, chopped cilantro, lime juice, garlic powder, salt, and black pepper. Stir until well combined.
  • For the chia fresca, combine all ingredients together. Let sit for 5 minutes to allow the chia seeds to bloom.
  • Serve the tacos with tortilla chips and guacamole, and sparkling chia fresca.
