Prep all ingredients according to the ingredient list above.
Season the ground beef with chili powder, ground cumin, garlic powder, salt, and black pepper.
Heat the oil in a skillet over medium heat. Once hot, add the seasoned ground beef and sauté, breaking it into small pieces, until nicely browned. Remove from heat and set aside.
Warm the taco shells on both sides in a pan over medium heat for about 20 seconds per side.
Fill each taco shell with cooked beef. Top with diced onion, tomatoes, shredded Monterey Jack cheese, and chopped fresh cilantro.
To make the guacamole, mash the avocados in a bowl until smooth. Add diced tomatoes, chopped cilantro, lime juice, garlic powder, salt, and black pepper. Stir until well combined.
For the chia fresca, combine all ingredients together. Let sit for 5 minutes to allow the chia seeds to bloom.
Serve the tacos with tortilla chips and guacamole, and sparkling chia fresca.
