Ingredients

Broodje Haring

  • 8 oz Salt-cured herring fillets fully cooked
  • 2 Sub rolls
  • 2 TBSP Mayonnaise
  • 1 TBSP Dijon mustard
  • Salt to taste
  • Black pepper to taste
  • 1 small Onion thinly sliced
  • 2 Pickles sliced
  • 2 TBSP Fresh parsley chopped
  • 2 TBSP Fresh chives chopped
  • 2 oz Potato chips
  • 2 Pickle spears

Apple Slices

  • 1 cup Apple sliced

Mango Lassi

  • 1 cups Frozen mango chopped
  • 1/4 cup Plain yogurt
  • 3 cups Milk
  • ¼ tsp Ground cardamom
  • 1 TBSP Sugar to taste

Instructions

  • Prep all ingredients as indicated above.
  • Rinse the herring filets under cold water and pat them dry with a paper towel. If using raw herring, cook to an internal temperature of 145°F (63°C).
  • Slice the rolls in half and lightly toast in a toaster oven or oven broiler on low.
  • In a small bowl, mix together the mayonnaise and Dijon mustard. Season with salt and black pepper to taste.
  • Spread the mayonnaise and mustard mixture on the bottom halves of the bread rolls.
  • Place a herring filet on each roll and top with sliced onions and pickles.
  • Sprinkle fresh parsley and chives over the toppings.
  • Place the top halves of the bread rolls on the sandwiches to complete the broodje haring.
  • Blend all the ingredients for the mango lassi until smooth. Adjust sweetness to taste. Keep refrigerated if not serving immediately.
  • Serve the broodje haring with potato chips, pickle spears, apple slices, and mango lassi.
