Ingredients
Broodje Haring
- 8 oz Salt-cured herring fillets fully cooked
- 2 Sub rolls
- 2 TBSP Mayonnaise
- 1 TBSP Dijon mustard
- Salt to taste
- Black pepper to taste
- 1 small Onion thinly sliced
- 2 Pickles sliced
- 2 TBSP Fresh parsley chopped
- 2 TBSP Fresh chives chopped
- 2 oz Potato chips
- 2 Pickle spears
Apple Slices
- 1 cup Apple sliced
Mango Lassi
- 1 cups Frozen mango chopped
- 1/4 cup Plain yogurt
- 3 cups Milk
- ¼ tsp Ground cardamom
- 1 TBSP Sugar to taste
Instructions
- Prep all ingredients as indicated above.
- Rinse the herring filets under cold water and pat them dry with a paper towel. If using raw herring, cook to an internal temperature of 145°F (63°C).
- Slice the rolls in half and lightly toast in a toaster oven or oven broiler on low.
- In a small bowl, mix together the mayonnaise and Dijon mustard. Season with salt and black pepper to taste.
- Spread the mayonnaise and mustard mixture on the bottom halves of the bread rolls.
- Place a herring filet on each roll and top with sliced onions and pickles.
- Sprinkle fresh parsley and chives over the toppings.
- Place the top halves of the bread rolls on the sandwiches to complete the broodje haring.
- Blend all the ingredients for the mango lassi until smooth. Adjust sweetness to taste. Keep refrigerated if not serving immediately.
- Serve the broodje haring with potato chips, pickle spears, apple slices, and mango lassi.
