Ingredients
Muesli with Yogurt
- 2 ½ TBSP Almonds toasted and coarsely chopped
- 1 ¼ TBSP Sunflower seeds toasted
- ½ cup Granola
- 2 ½ TBSP Dried currants
- 2 ½ TBSP Dried apricots finely chopped
- ¾ cup Greek yogurt
Garnish
- 1 Apple sliced
- 2 tsp Honey
Green Juice
- 1 Pear cored and halved
- 1 stalk Celery cut into several pieces
- ½ Cucumber cut into several pieces
- ¼ cup Fresh parsley packed, stems OK
- ½ inch piece Fresh ginger peeled
- 1 Orange peeled
- 2 cups Water as needed for blending
Instructions
- Prepare all ingredients as listed.
- (Optional) Toast the almonds and sunflower seeds in a dry skillet over medium heat for 2–3 minutes, stirring often. Let cool slightly.
- In a mixing bowl, combine granola, currants, chopped apricots, almonds, and sunflower seeds.
- Divide yogurt between two bowls. Spoon muesli mixture evenly over the top. Garnish with apple slices and drizzle with honey.
- For the juice, combine pear, celery, cucumber, parsley, ginger, orange, and water in a blender or juicer. Blend until smooth. Strain if desired.
- Serve the muesli bowls with fresh green juice. Enjoy!
