Ingredients
Egg, Fried Ham, Melted Cheddar and Dijonnaise on Ciabatta
- 1 TBSP Butter for frying eggs and ham
 - 6 slices Deli ham
 - 4 Eggs
 - Salt to taste
 - Black pepper to taste
 - 2 slices Cheddar cheese
 - 4 slices Ciabatta bread
 - 2 TBSP Mayonnaise
 - 2 TBSP Dijon mustard
 
Fruit
- 1 cup Fresh fruit e.g. apple slices, nectarine slices, or banana slices, washed and prepared as needed
 
Orange Juice
- 16 oz Orange juice cold
 
Instructions
- Prepare all ingredients as listed above.
 - In a skillet over medium heat, melt the butter. Add deli ham slices and cook for 2–3 minutes per side until browned. Remove and set aside.
 - In the same skillet, add more butter if needed. Crack in the eggs and cook to desired doneness (sunny-side up, over-easy, or scrambled). Season with salt and black pepper. In the final minute of cooking, place a slice of cheddar cheese over each egg to melt.
 - While the eggs cook, toast ciabatta slices in a toaster or dry skillet until golden. In a small bowl, mix mayonnaise and Dijon mustard to make Dijonnaise.
 - Assemble each sandwich: spread Dijonnaise on half the slices of toasted ciabatta. Top with fried ham and eggs. Cap with the remaining ciabatta. Cut sandwiches in half if desired.
 - Serve the sandwich with fresh fruit and orange juice.
