Ham Egg and Cheese Ciabatta

Ingredients

Egg, Fried Ham, Melted Cheddar and Dijonnaise on Ciabatta

  • 1 TBSP Butter for frying eggs and ham
  • 6 slices Deli ham
  • 4 Eggs
  • Salt to taste
  • Black pepper to taste
  • 2 slices Cheddar cheese
  • 4 slices Ciabatta bread
  • 2 TBSP Mayonnaise
  • 2 TBSP Dijon mustard

Fruit

  • 1 cup Fresh fruit e.g. apple slices, nectarine slices, or banana slices, washed and prepared as needed

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prepare all ingredients as listed above.
  • In a skillet over medium heat, melt the butter. Add deli ham slices and cook for 2–3 minutes per side until browned. Remove and set aside.
  • In the same skillet, add more butter if needed. Crack in the eggs and cook to desired doneness (sunny-side up, over-easy, or scrambled). Season with salt and black pepper. In the final minute of cooking, place a slice of cheddar cheese over each egg to melt.
  • While the eggs cook, toast ciabatta slices in a toaster or dry skillet until golden. In a small bowl, mix mayonnaise and Dijon mustard to make Dijonnaise.
  • Assemble each sandwich: spread Dijonnaise on half the slices of toasted ciabatta. Top with fried ham and eggs. Cap with the remaining ciabatta. Cut sandwiches in half if desired.
  • Serve the sandwich with fresh fruit and orange juice.
