Prepare all ingredients as listed above.
In a skillet over medium heat, melt the butter. Add deli ham slices and cook for 2–3 minutes per side until browned. Remove and set aside.
In the same skillet, add more butter if needed. Crack in the eggs and cook to desired doneness (sunny-side up, over-easy, or scrambled). Season with salt and black pepper. In the final minute of cooking, place a slice of cheddar cheese over each egg to melt.
While the eggs cook, toast ciabatta slices in a toaster or dry skillet until golden. In a small bowl, mix mayonnaise and Dijon mustard to make Dijonnaise.
Assemble each sandwich: spread Dijonnaise on half the slices of toasted ciabatta. Top with fried ham and eggs. Cap with the remaining ciabatta. Cut sandwiches in half if desired.
Serve the sandwich with fresh fruit and orange juice.
