Ingredients

For the ribs:

  • ½ TBSP Brown sugar
  • 1 tsp Paprika
  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 2 lbs Pork baby back ribs a rib rack is about 2 lbs on average
  • 2 cups BBQ sauce

For the grilled corn:

  • 2 ears Corn on the cob shucked
  • 2 tsp Butter

For the garlic cheese bread:

  • 2 slices Crusty bread
  • 2 TBSP Butter softened
  • 1 clove Garlic minced
  • cup Mozzarella cheese shredded

For serving:

  • 4 slices Watermelon

For the watermelon mint drink:

  • 2 cups Watermelon diced
  • 6 leaves Fresh mint
  • 1 TBSP Lime juice
  • 1 tsp Honey or agave syrup, optional, adjust to taste
  • 16 oz Water cold

Instructions

  • Prep the ingredients per the instructions above.
  • Make the dry rub: In a small bowl, mix brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Rub the seasoning mixture evenly over the ribs.
  • Preheat the oven to 350°F (176°C). Wrap the ribs in foil and cook on a baking sheet in the oven for 3 to 4 hours until the ribs are very tender.
  • Preheat a grill or grill pan on medium heat.
  • Grill the corn: Grill the corn on all sides until tender and nicely charred. Then lather with butter and season with salt and pepper.
  • Finish the ribs: Remove the ribs from the foil and lather with bbq sauce. Grill the ribs on both sides until nicely charred, about 3 - 5 minutes per side. Then slice in between the rib joints to portion.
  • Make the garlic cheese bread: Toast the bread. Then spread butter and garlic on one side. Top with shredded mozzarella, and broil in the oven until the cheese is melted.
  • Make the watermelon mint drink: In a blender, combine watermelon, mint, lime juice, honey (if using), and cold water. Blend until smooth. (Optional: Strain through a fine mesh strainer into a pitcher.)
  • Serve the grilled BBQ ribs with grilled corn, garlic cheese bread, watermelon slices, and watermelon mint drink.
