Prep the ingredients per the instructions above.
Make the dry rub: In a small bowl, mix brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Rub the seasoning mixture evenly over the ribs.
Preheat the oven to 350°F (176°C). Wrap the ribs in foil and cook on a baking sheet in the oven for 3 to 4 hours until the ribs are very tender.
Preheat a grill or grill pan on medium heat.
Grill the corn: Grill the corn on all sides until tender and nicely charred. Then lather with butter and season with salt and pepper.
Finish the ribs: Remove the ribs from the foil and lather with bbq sauce. Grill the ribs on both sides until nicely charred, about 3 - 5 minutes per side. Then slice in between the rib joints to portion.
Make the garlic cheese bread: Toast the bread. Then spread butter and garlic on one side. Top with shredded mozzarella, and broil in the oven until the cheese is melted.
Make the watermelon mint drink: In a blender, combine watermelon, mint, lime juice, honey (if using), and cold water. Blend until smooth. (Optional: Strain through a fine mesh strainer into a pitcher.)
Serve the grilled BBQ ribs with grilled corn, garlic cheese bread, watermelon slices, and watermelon mint drink.
