Ham Egg and Cheese Breakfast Sandwich

Ingredients

Egg, Fried Ham, Melted Cheddar and Dijonnaise on Sourdough

  • 1 TBSP Butter for frying eggs and ham
  • 8 slices Deli ham
  • 4 Eggs
  • 2 slices Cheddar cheese
  • 4 slices Sourdough bread
  • 2 TBSP Mayonnaise
  • 2 TBSP Dijon mustard
  • Salt to taste
  • Black pepper to taste

Fruit

  • 1 cup Fresh fruit e.g. apple slices, nectarine slices, or banana slices, washed and prepared as needed

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prepare all ingredients as listed. Wash and slice the fruit as needed.
  • In a skillet over medium heat, melt the butter. Add deli ham slices and cook for 2–3 minutes per side until browned. Remove and set aside.
  • In the same skillet, add more butter if needed. Crack in the eggs and cook to desired doneness (sunny-side up, over-easy, or scrambled). Season with salt and black pepper. In the final minute of cooking, place a slice of cheddar cheese over each egg to melt.
  • While eggs cook, toast sourdough slices in a toaster or dry skillet until golden. In a small bowl, mix together mayonnaise and Dijon mustard to make Dijonnaise.
  • Assemble each sandwich by spreading Dijonnaise on two slices of toasted sourdough. Top with four slices of fried ham, two eggs with melted cheddar, then cap with the remaining slices of sourdough. Cut sandwiches in half if desired.
  • Serve the sandwiches with fresh fruit and orange juice. Enjoy your breakfast!
