Prepare all ingredients as listed. Wash and slice the fruit as needed.
In a skillet over medium heat, melt the butter. Add deli ham slices and cook for 2–3 minutes per side until browned. Remove and set aside.
In the same skillet, add more butter if needed. Crack in the eggs and cook to desired doneness (sunny-side up, over-easy, or scrambled). Season with salt and black pepper. In the final minute of cooking, place a slice of cheddar cheese over each egg to melt.
While eggs cook, toast sourdough slices in a toaster or dry skillet until golden. In a small bowl, mix together mayonnaise and Dijon mustard to make Dijonnaise.
Assemble each sandwich by spreading Dijonnaise on two slices of toasted sourdough. Top with four slices of fried ham, two eggs with melted cheddar, then cap with the remaining slices of sourdough. Cut sandwiches in half if desired.
