Ingredients
Guacamole
- 1 Avocado pitted and diced
- 2 tsp Red onion minced
- 1/4 tsp Lime juice
- 1 tsp Fresh cilantro chopped
Beef
- 8 oz Ground beef
- 1/2 tsp Onion powder
- 1/2 tsp Ground cumin
- 1/2 tsp Garlic powder
- 1/2 tsp Paprika
- 1/4 tsp Chili powder
Toppings
- 4 oz Tortilla chips
- 1/4 cup Monterey jack cheese shredded
- 1/4 cup Pepper jack cheese shredded
- 1/2 cup Cheddar cheese shredded
- 1/2 cup Refried beans
- 1 cup Romaine lettuce shredded
- 1/2 cup Tomato diced small
- 1 Jalapeño pepper sliced (optional)
- 1/4 cup Red onion diced
- 4 TBSP Sour cream
- Salt to taste
- Black pepper to taste
Beer
- 24 oz Light beer cold
Instructions
- Prepare the Ingredients as instructed above.
- Preheat the oven broiler to low.
- Make the Guacamole: In a bowl, mash the avocado with a fork until smooth. Mix in the minced red onion, lemon juice, and chopped cilantro. Season with salt and pepper to taste. Refrigerate until ready to use.
- Cook the Beef: Heat a nonstick pan over medium heat. Add the ground beef along with onion powder, cumin, garlic powder, paprika, and chili powder. Break the beef into small pieces with a spatula and cook until nicely browned. Season with salt and pepper to taste.
- Assemble the Nachos: Spread the tortilla chips on a baking sheet. Spoon the cooked beef evenly over the chips. Top with shredded Monterey jack, pepper jack, and cheddar cheeses, then add spoonfuls of refried beans.
- Broil: Place the tray under the broiler and heat just until the cheese is melted and bubbly.
- Serve: Remove from the oven and top with romaine lettuce, diced tomato, sliced jalapeño (if using), diced red onion, sour cream, and guacamole. Serve with cold beer and enjoy!
