Ingredients

Guacamole

  • 1 Avocado pitted and diced
  • 2 tsp Red onion minced
  • 1/4 tsp Lime juice
  • 1 tsp Fresh cilantro chopped

Beef

  • 8 oz Ground beef
  • 1/2 tsp Onion powder
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • 1/2 tsp Paprika
  • 1/4 tsp Chili powder

Toppings

  • 4 oz Tortilla chips
  • 1/4 cup Monterey jack cheese shredded
  • 1/4 cup Pepper jack cheese shredded
  • 1/2 cup Cheddar cheese shredded
  • 1/2 cup Refried beans
  • 1 cup Romaine lettuce shredded
  • 1/2 cup Tomato diced small
  • 1 Jalapeño pepper sliced (optional)
  • 1/4 cup Red onion diced
  • 4 TBSP Sour cream
  • Salt to taste
  • Black pepper to taste

Beer

  • 24 oz Light beer cold

Instructions

  • Prepare the Ingredients as instructed above.
  • Preheat the oven broiler to low.
  • Make the Guacamole: In a bowl, mash the avocado with a fork until smooth. Mix in the minced red onion, lemon juice, and chopped cilantro. Season with salt and pepper to taste. Refrigerate until ready to use.
  • Cook the Beef: Heat a nonstick pan over medium heat. Add the ground beef along with onion powder, cumin, garlic powder, paprika, and chili powder. Break the beef into small pieces with a spatula and cook until nicely browned. Season with salt and pepper to taste.
  • Assemble the Nachos: Spread the tortilla chips on a baking sheet. Spoon the cooked beef evenly over the chips. Top with shredded Monterey jack, pepper jack, and cheddar cheeses, then add spoonfuls of refried beans.
  • Broil: Place the tray under the broiler and heat just until the cheese is melted and bubbly.
  • Serve: Remove from the oven and top with romaine lettuce, diced tomato, sliced jalapeño (if using), diced red onion, sour cream, and guacamole. Serve with cold beer and enjoy!
