Prepare the Ingredients as instructed above.
Preheat the oven broiler to low.
Make the Guacamole: In a bowl, mash the avocado with a fork until smooth. Mix in the minced red onion, lemon juice, and chopped cilantro. Season with salt and pepper to taste. Refrigerate until ready to use.
Cook the Beef: Heat a nonstick pan over medium heat. Add the ground beef along with onion powder, cumin, garlic powder, paprika, and chili powder. Break the beef into small pieces with a spatula and cook until nicely browned. Season with salt and pepper to taste.
Assemble the Nachos: Spread the tortilla chips on a baking sheet. Spoon the cooked beef evenly over the chips. Top with shredded Monterey jack, pepper jack, and cheddar cheeses, then add spoonfuls of refried beans.
Broil: Place the tray under the broiler and heat just until the cheese is melted and bubbly.
Serve: Remove from the oven and top with romaine lettuce, diced tomato, sliced jalapeño (if using), diced red onion, sour cream, and guacamole. Serve with cold beer and enjoy!
