Ingredients

Sandwich

  • 4 slices Sourdough bread
  • 2 TBSP Mayonnaise
  • 1 cup Arugula
  • 1 cup Baby spinach
  • 4 slices Tomato
  • 6 oz Deli turkey breast
  • 4 slices Provolone cheese
  • 1/2 Cucumber thinly sliced
  • 1/4 cup Red onion thinly sliced
  • 1/4 cup Pepperoncini sliced
  • 1 ripe Avocado sliced
  • 1 TBSP Extra-virgin olive oil
  • 1/4 tsp Salt to taste
  • 1/4 tsp Black pepper to taste
  • 1/2 tsp Oregano

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks (or use baby carrots)
  • 1/2 cup Hummus
  • 2 Pickle spears

Homemade Lemonade

  • 1 cup Lemon juice fresh squeezed
  • 16 oz Water
  • 2 TBSP Sugar to taste
  • Ice cubes

Instructions

  • Toast the sourdough bread slices until golden brown.
  • Spread mayonnaise on one side of each slice of toasted bread.
  • Layer the bread with arugula, baby spinach, tomato slices, deli turkey, provolone cheese, cucumber, red onion, pepperoncini, avocado, then drizzle with olive oil and sprinkle with salt, pepper, and oregano.
  • Place the second slice of bread on top, mayonnaise side down. Press gently to hold the sandwich together and slice in half.
  • To make the lemonade, mix fresh-squeezed lemon juice, water, and sugar in a pitcher until sugar dissolves. Taste and adjust sweetness if needed. Serve over ice cubes.
  • Serve the sandwich with carrot sticks, hummus, pickle spears, and lemonade.
