Ingredients
Iced Rooibos Tea
- 4 cups Water
- 2 Rooibos tea bags (or 2 tsp loose rooibos tea)
- 1-2 TBSP Honey or sugar (adjust to taste)
- Ice cubes for serving
Honey Butter
- ¼ cup Butter softened at room temperature
- 2 TBSP Honey
Apple Arugula and Brie Panini
- 4 slices Sourdough bread (or choice of bread)
- 4 oz Brie cheese rind removed and cut into thin slices
- 1 Granny Smith apple cored and sliced
- 1 cup Arugula
Cheese and Crackers
- 12 Crackers
- 12 slices Your choice of block cheese (e.g. parmesan brie etc.)
Instructions
- Boil the water and steep the rooibos tea bags (or loose tea) for 5-7 minutes. Add honey or sugar to taste. Refrigerate to cool. Serve over ice if desired.
- Prepare the ingredients as instructed above.
- Whisk the butter and honey together until smooth and set aside.
- Spread butter on one side of each slice of bread.
- Layer with brie, apple, and arugula. Top with remaining slice of bread.
- Heat your panini press (or a grill pan/skillet). Add the sandwiches to the panini press and cook until the cheese is melted. If you don't have a panini press, you can make these sandwiches in a nonstick skillet or grill pan, placing another heavy pan on top to get a panini press effect. Cut in half.
- Serve with cheese and crackers and iced tea.
