Ingredients

Lobster Roll

  • 8 oz Cooked lobster meat chopped
  • 2 TBSP Mayonnaise
  • 1 TBSP Lemon juice
  • 1 TBSP Fresh chives chopped
  • Salt to taste
  • Black pepper to taste
  • 4 Hot dog buns
  • 1 TBSP Butter melted
  • 1 cup Romaine lettuce shredded (optional)
  • 2 oz Potato chips
  • 2 Pickle spears

Pink Lemonade

  • 24 oz Pink lemonade
  • Ice cubes for serving

Instructions

  • In a bowl, combine the chopped lobster meat, mayonnaise, lemon juice, chives, salt, and black pepper. Mix well to coat the lobster meat evenly with the dressing.
  • Preheat a skillet or griddle over medium heat. Brush the inside surfaces of the hot dog buns with melted butter.
  • Toast the buns in the skillet or griddle until they are golden brown on both sides.
  • Line each toasted bun with lettuce leaves (optional). Divide the lobster mixture equally between the buns, filling them generously.
  • Serve the Maine lobster rolls with potato chips, pickle spears, and pink lemonade.
