Sausage
- 4 Breakfast sausage links or patties
Banana Pancakes
- 1 Banana ripe, mashed
- 1 cup All-purpose flour
- 1 TBSP Sugar
- 1 tsp Baking powder
- ½ tsp Baking soda
- ¼ tsp Salt
- ½ cup Milk plus extra for desired consistency
- 1 Egg
- 2 TBSP Butter melted plus extra for greasing the pan
For Serving
- Maple syrup
- 1 Banana ripe, peeled and sliced
Milk
- 16 oz Milk cold
Instructions
- Prepare the Sausage: Heat a skillet over medium heat. Add the sausage and cook, turning occasionally, until fully cooked (refer to package instructions). Once cooked, remove from the skillet and set aside, keeping them warm.
- Make the Pancake Batter: In a large bowl, mash the banana until smooth. To the mashed banana, add all-purpose flour, sugar, baking powder, baking soda, and salt. Stir to combine. In a separate bowl, whisk together milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir gently until just combined. If the batter is too thick, add a little more milk to reach your desired consistency.
- Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter. Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook for about 2 - 3 minutes until bubbles form on the surface, then flip the pancake and cook for another 1 - 2 minutes on the other side until golden brown and cooked through. Repeat with the remaining batter.
- Serve the pancakes topped with banana slices and maple syrup, serve with sausage and milk. Enjoy!
