Make the Pancake Batter: In a large bowl, mash the banana until smooth. To the mashed banana, add all-purpose flour, sugar, baking powder, baking soda, and salt. Stir to combine. In a separate bowl, whisk together milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir gently until just combined. If the batter is too thick, add a little more milk to reach your desired consistency.
Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter. Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook for about 2 - 3 minutes until bubbles form on the surface, then flip the pancake and cook for another 1 - 2 minutes on the other side until golden brown and cooked through. Repeat with the remaining batter.
Serve the pancakes topped with banana slices and maple syrup, serve with sausage and milk. Enjoy!
