Ingredients

Sausage

  • 4 Breakfast sausage links or patties

Banana Pancakes

  • 1 Banana ripe, mashed
  • 1 cup All-purpose flour
  • 1 TBSP Sugar
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • ¼ tsp Salt
  • ½ cup Milk plus extra for desired consistency
  • 1 Egg
  • 2 TBSP Butter melted plus extra for greasing the pan

For Serving

  • Maple syrup
  • 1 Banana ripe, peeled and sliced

Milk

  • 16 oz Milk cold

Instructions

  • Prepare the Sausage: Heat a skillet over medium heat. Add the sausage and cook, turning occasionally, until fully cooked (refer to package instructions). Once cooked, remove from the skillet and set aside, keeping them warm.
  • Make the Pancake Batter: In a large bowl, mash the banana until smooth. To the mashed banana, add all-purpose flour, sugar, baking powder, baking soda, and salt. Stir to combine. In a separate bowl, whisk together milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir gently until just combined. If the batter is too thick, add a little more milk to reach your desired consistency.
  • Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter. Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook for about 2 - 3 minutes until bubbles form on the surface, then flip the pancake and cook for another 1 - 2 minutes on the other side until golden brown and cooked through. Repeat with the remaining batter.
  • Serve the pancakes topped with banana slices and maple syrup, serve with sausage and milk. Enjoy!
